Last night I was thinking about breakfast. Okay, I was dreading it. Stop and Shop didn’t have the cereal I can have. The food coop was closed. Oatmeal, here I go again. Or so I thought. Alex suggested we pick up eggs. He could have a side of toast if he wanted, but me? I’ll pass.
So what was I going to have? At the same time I was peeling a blood orange. So sweet, tart and juicy! Mmm I’ll love to have some more of this. Wait a minute, what about breakfast?!
So I mentally prepared eggs with blood orange slices on the side. But was that enough? Nah. I told him that I’ll pick some other fruit at the store.
Of course when we got there, the first thing my eyes fell on were a huge mound of pineapples. Yum!!!
This morning Alex made an omelet with cherry tomatoes and vegan mozzarella. I happily peeled blood oranges for us both and chopped up the pineapple. I even warmed a small bowl of almond milk mixed up with 3 tablespoons of flaxseed meal for my stomach. It became gelatinous. Since it was chilly, I heated up a mug of apple cider.
All that fruit, eggs and fiber filled me up so well that I barely could finish it all. But wow, what a difference fresh fruit makes!!! Especially if it’s not your typical breakfast fare. Change it up and revel in the most important meal of the day.
