A refreshing ginger lime mocktail

What is one thing that people often look forward to at a party, beside the wonderful food and delightful company? Drinks. But it can’t be all beer or soda, can it? Especially if you have children around or people who are abstaining from alcohol. The solution is this: a mocktail!

I found this recipe on Elana’s Pantry (her blog is on my links), and I adjusted a few things so it would be corn free. It was a hit!

Ginger Lime Mocktail

1/2 cup fresh lime juice

2 teaspoon fresh ginger, grated

1/4 cup sugar (I use vegan evaporated cane juice)

2 Liter bottle of original seltzer water

Fresh limes to garnish

A pitcher with lime and ginger

You can either split these into two pitchers and fill up with ice, or put all in one. Serve chilled, and be prepared for people to demand the recipe from you! I think I’ll make it again soon . . .

    Ginger is always a good cocktail ingredient.
    I make one with ginger beer, dark rum and angostura bitters – no need for extra sugar – just a squeeze of lime and a slice to finish with.
    Ice if you want it.
    Deliciously warming.
    Works fairly well with minimal or no alcohol too.
